Life can be crazy. Even though I love to cook, amidst all the travel and Penelopi’s school activities, my schedule doesn’t always permit for me to spend countless hours in the kitchen. I discovered the mason jar recipes from my good friend Jordon. She suggested that I check them out for a quick healthy lunch. When you make them, you have lunch for the week! Plus, the tasty, fun and easy meals are perfect to grab on the go.
Another thing I love about Mason Jar Salads is how I have the ability to experiment with different recipes and themes…the options are neverending. I’ve chosen my two favorite mason jars below to share. The first is a Taco salad which pairs perfectly with a margarita! And if you’re in the mood for some Italian, the second is a fresh mozzarella, tomato, pasta and spinach salad.
The key to a successful mason jar salad is to put your dressing in the jar first, then add your hardy vegetables, then your protein and finally your lettuce. 5 wide mouth quart size mason jars
1 lb ground turkey
1 can black beans, drained
1 packet taco seasoning (I use simply organic)
1¼ cups salsa
5 tablespoons plain Greek yogurt
1 quart cherry tomatoes, halved
5 mini cucumbers, sliced
1 small to medium red onion, chopped
2 avocados, chopped
juice from half of a lime
11 ounce jar pickled jalapeños, drained and chopped
5 cups chopped romaine lettuce
-In a medium pan cook ground turkey until no longer pink. Add black beans, seasoning packet, and the amount of water stated in seasoning packet directions. Let mixture cool.
-Mix salsa and greek yogurt to create dressing.
Fresh Mozzarella, Tomato, Pasta & Spinach Salad
10 tablespoons balsamic vinegar dressing
1 quart grape tomatoes
10 ounces fresh mozzarella
2 cups dry whole grain or tri color pasta, cooked
10 cups baby spinach
5 quart size mason jar salads
-Divide ingredients evenly in mason jars starting with dressing, then tomatoes, mozzarella, pasta, and then spinach. Place lid on jar and close tight.
