I was raised outside Nashville so my family lives in town and my extended family is only a car ride away. I absolutely love it when we all pile up together and spend quality time with one another. In the midst of the fun that ten nieces and nephews often bring, I feel so blessed to be surrounded by them. Some of my favorite moments are the times we are all packed together in a room and laughing. We forget about the time, until we realize the sun is about to come up! Or until someone starts snoring…
We LOVE to have movie nights at our house. During the day, of our movie night, we will go pay a visit to one of our favorite sugar shops, The Sugar Dive. Everyone picks out their favorite sweet treat to enjoy during the movie. Our salty treat is my homemade popcorn. We make it in a popcorn popper, but I have heard that you can also use a Dutch Oven to pop your kernels.
When it’s finally time to play the movie, we start popping the corn. I use Orville Redenbacher’s seeds in our popcorn maker that I got from Amazon. It’s so easy and it always makes enough for the whole gang!
3 T of Orville Redenbacher’s Popping & Topping
½ cup of Orville Redenbacher’s White Corn
West Bend Stir Crazy Popcorn Maker (from Amazon)
-Place the base on a dry, level surface, away from any edge. Set the popping plate with stir rod onto the heating base. The handles of the popping plate should rest snugly over the handles on the heating base and the connector should fit completely over the shaft in the heating base. Make sure that the popping plate with stir rod is completely seated in the base.
-Put vegetable oil and corn into the popping plate. Do not substitute butter, margarine, shortening, or lard for vegetable oil as these will burn or smoke excessively. Do not use more than 3 tablespoons of oil.
-Place the cover on the popping plate. To butter your popcorn, divide 6 equal-sized parts and place in a single layer in the butter well. Popcorn will be buttered as it pops.
-Plug cord into a 120 volt, AC outlet only. The stir rod will rotate as long as the corn popper is on. Do not shake popper during popping cycle. In 4 to 6 minutes the popping cycle will be completed.
-Add your salt as desired. It’s better to use your hands to salt the popcorn. The salt will go on more evenly.
-Grab an empty bowl or bag and ENJOY!
As much as we love our popcorn, it’s impossible for us to have a movie night without some sweets. These infamous Funfetti cupcakes are simple and easy to serve. You can use a white cake mix and add sprinkles, or the traditional “Pillsbury Funfetti” cake mix. I substitute the cupcake wrapper with ice cream cones. It’s tasty and I don’t have to worry about finding cupcake wrappers laying around the next day!
Funfetti Ice Cream Cone Cupcakes
Box of Pillsbury Cake Mix (or can use white cake recipe and add sprinkles)
2 eggs (local farm fresh always taste better)
1/4 vegetable oil
1 1/4 cups water
1 can of Funfetti Frosting or Vanilla Frosting
20-22 flat bottom ice cream cones
2 Muffin Pans
-Preheat oven to 350
-In a large bowl combine cake mix, oil, and eggs. Stir with a spoon until thoroughly moistened. Whip for two minutes.
-Fill cones 3/4 full with batter; place ice cream cone in muffin cup pan.
-Bake for 25-35 minutes. Test with a toothpick (stick in the center and pull out; no batter = done) or until cake springs back when lightly touched in the center.
-Spread frosting on tops of cupcakes and add sprinkles!
