Since it has been so warm this winter, you might have to imagine a chilly winter evening. You have on your warm jammies and fuzzy socks while lounging by a roaring fire. All your Christmas shopping is done and presents are wrapped. We all need moments like these that allow us to slow down and enjoy the stillness and simplicity of life. I say all of this to get you in the mood for a lazy day and the best kind of comfort food around – tomato soup and grilled cheese.

Together, we bring you the ULTIMATE recipe for a good ol’ fashioned tomato soup and bacon grilled cheese. Yes, you read that right…BACON. If that doesn’t get you in the mood, I don’t know what will. Invite a friend over or enjoy some time alone as you veg out and cook up Sweet Ladi Jane’s Bacon Grilled Cheese with Aaron Parker’s Tomato Soup.
Aaron Parker’s Tomato Soup
1 – 64 oz Campbell’s Bottle of Tomato Juice
2 – 28oz cans of whole peeled plum tomatoes
2 cups of heavy whipping cream
1/4 cup of butter
Salt and pepper to taste
Basil (based on preference / recommend a handful)
Add 2 cans of tomatoes and juice in dutch oven to simmer for 15 minutes on high.
Add basil after 25 minutes of simmering
then blend with hand mixer until it is the consistency you prefer
add 2 cups of cream
add salt and pepper to taste
then simmer for 20 minutes
+Helpful hint: Cuisinart handheld blender. blend it in the dutch over. recommend leaving a “little texture”
+To avoid a mess, always point the hand blender away from you and DO NOT pull it out while it is running
Sweet Ladi Jane’s Bacon Grilled Cheese
*makes four sandwiches
8 pieces of bread
1 lb of bacon – Oscar Meyer thick cut
Sargentos shredded cheese (1 cup)
Gruyère cheese (1 cup)
1 tablespoon of butter
Put cheese and bacon pieces in food processor with 1 tablespoon of butter
Pulse until it create a paste texture
Spread mixture of slice of white bread
Spray Panini maker with Pam
Add sandwhich to panini maker (on medium/low heat)
Let cook 2-3 minutes
